When I travel to Turkey I normally get a new SIM card, will I still be able to use Revolut app

As long as you don’t log-out manually from the app, you will still be able to use it with your new card. However, logging in again wouldn’t be possible with the Turkish SIM card 
However, you can also change your phone number by going to More, then Profile and finally Personal details
